What sits in this band
Three parts account for most of it.
The element. Electric Viking ovens, and the ovens of dual-fuel ranges, bake and broil with elements. On the professional built-ins the bake element hides under the floor and two broil elements share the ceiling. One that has burned through leaves the oven slow to come up to heat, or baking pale underneath.
The sensor. Some Viking electric wall ovens read their heat through a temperature sensor wired to the control board. A sensor giving a false reading makes the oven aim at the wrong number.
The thermostat. On an older Viking gas range with knob controls, the thermostat sits behind the control panel, with a sensing bulb clipped inside the oven’s back wall, and it switches the bake and broil circuits.
Where the band stops
An oven a little off its setting may need adjusting rather than a part, and that is quoted after the diagnosis.
